summer gazpacho


Summer gazpacho inspired by this recipe. I used what I had on hand, and added a few more ingredients just because. I also cut the recipe down since I didn’t want a week’s worth of leftovers!

  • peaches
  • golden beets, cooked
  • small cucumber
  • sun gold cherry tomatoes
  • lemon juice
  • olive oil
  • garlic clove
  • white wine vinegar
  • salt and pepper
  • parsley
  • avocado


Chop up everything except the parsley and avocado into whatever size chunks your blender/food processor can handle. Add a drizzle of olive oil, vinegar, and a bit of water. Blend until it’s the consistency you prefer. Season with salt and pepper and fresh squeezed lemon juice. I reserved some small diced peaches and cucumbers and stirred those in to add some texture. Top with chopped parsley and avocado.
